Subway announced earlier this week that they no longer are going to use a chemical commonly found in yoga mats as a bleaching agent in theirs as well as many other fast food chains’ breads buns. Subway declared the recent change came because they feel, “Americans deserve the right to truly eat fresh.”
Lately , I feel that many fast food chains have been making similar ridiculous claims . The slogans range from , “100% real white meat chicken,” (wait, so I wasn’t eating chicken. It’s taste liked chicken, kinda ?) to, “Made with REAL beef!” (What, were they slaughtering imaginary cows before that?)
So what if a restaurant started saying they’re no longer going to spit into food,
because you deserve better? “100% spit free, because we care :-)”
😳 I’m sure that restaurant would be shut down in no time , yet major food chains are still pumping out billions of dollars in unhealthy Frankenstein food. Even worse, as in the case of the subway yoga mat breads , the FDA says that plastic is 100% safe for consumption . Well , I’m sure eating my pet aussie’s poop is pretty safe too but that doesn’t mean I’m going to eat that .
I came up with this recipe today, mostly because my lack of options in my refrigerator. This super cheap and ridiculously easy recipe will fill you up without busting your wallet and (are you ready for this ?) it’s vegan friendly (Kitty’s fave). Could easily feed a family of 5 or make for great leftovers for the week and probably costs ehhhh under $5 for the non-broth option, if you don’t already have most of the ingredients already.
1 small can of fire roasted tomatoes
1 chopped up large sweet pepper
4 cups of water (or 4 cups of low sodium vegetable broth for more flavor)
1 half of an onion chopped
3 cloves of garlic
2 tablespoons of olive oil
1 tablespoon of dried basil
salt and pepper to taste
sprinkle of parsley , and box of angel hair pasta or any damn pasta you want - you want bow tie, have bow tie…linguini probably also would be delightful. I used the high fiber angel hair from Barilla. Cook ultra low on the stove for 1hr or so, stirring regularly.
Feel free to add mushrooms, I would have but didn’t have any on hand. Have fun with this. If you’re not vegan, maybe add some leftover chicken you’re sick of looking at in your fridge. It’s really hard to mess this one up.
While watching my boyfriend mindlessly inhale potato chips last night, I felt a tinge of jealously. Some greater power has gifted him with the calorie burning metabolism that can only be compared to that of a way a rocket ship burns fuel as it blasts into the stratosphere . I found myself eying the little grease crackers jealously.
It was only an hour later that I remembered why it was that I didn’t eat that crap. He laid on the couch complaining of a stomach ache then disappeared to the bathroom for about 20 minutes or so.
I then inspected the bag an realized I didn’t have a freakin’ clue what was in these things. I assumed, “natural potato chips,” with, “simple ingredients,” meant the ingredients would be something I could identify- sort of . It was then that my jealously dissipated. My veg out go to is raw broccoli and cauliflower with a side of ginger dressing. Mini peppers and cucumber are awesome too. Yes, sounds boring but I find it delicious and much kinder to my metabolism, comparable to that of a fat kid on a unicycle. I simple put together a small dish loaded with raw veggies. I grab, I dip, I munch (like the Bunny I am) unconsciously as I zone out to what ever we’re watching. Extra bonus ? I don’t find myself stuck in a bathroom for 35 minutes of my favorite show. Win.

The app is easy to use and makes your inactive ass feel accomplished (well, more accomplished than sitting and watching another episode of Dance Moms- Kitty, why do I watch this crap?) Studies have shown that even as little as 15 minutes a day of low impact exercise can offer a 14% lower heart disease risk than those who remained inactive! So get moving, you’re 7 minutes closer to a healthier and happier you.
